Description

A simple and delicious Chicken Salad, perfect for a light meal or picnic. This dish combines tender rotisserie chicken with crunchy pecans, sweet cranberries, and a creamy dressing. It’s an easy-to-make, flavorful salad, ideal for croissants, sandwich rolls, or a healthy snack with fresh veggies.


Ingredients

  • 2 cups prepared rotisserie chicken, diced
  • 1/2 cup pecans, coarsely chopped (optional to toast)
  • 1/3 cup dried cranberries
  • 2 stalks celery, thinly sliced
  • 1/4 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon honey
  • 1 1/2 teaspoons Dijon-style mustard
  • 1 1/2 teaspoons poppy seeds (optional)
  • 1 teaspoon lemon juice
  • Salt and pepper, to taste

Instructions

  • Optional: Place pecans in a dry pan over medium heat. Toast until fragrant, stirring occasionally. Set aside to cool, then finely chop.
  • In a large bowl, combine all the salad ingredients. Season to taste.
  • Stir gently until everything is well coated. Taste and adjust the seasoning if needed.
  • Serve with your choice of sides. This chicken salad is great on a croissant with lettuce or served with apples, celery sticks, and crackers. Enjoy!

Notes
