Ingredients
For the Casserole:

3 cups frozen hash browns, thawed slightly (about 8 ounces)

For the Topping:

12–14 Ritz crackers (about half a sleeve), crushed

½ cup shredded cheddar cheese
Instructions

Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.

Prepare the casserole: In a large mixing bowl, combine the thawed hashbrowns, cooked chicken, bacon bits, shredded cheddar cheese, cream of chicken soup, milk, thawed mixed vegetables, and dried thyme. Stir well to combine all ingredients.

Prepare the topping: In a small bowl, mix together the crushed Ritz crackers and ½ cup shredded cheddar cheese. Sprinkle the mixture evenly over the top of the casserole.
