Description

This Chicken and Broccoli Pasta is a quick, creamy, and flavorful dish perfect for a weeknight dinner. Tender chicken, broccoli, and pasta are combined in a creamy Parmesan sauce for a comforting, satisfying meal.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts, diced
  • 2 cups broccoli florets (steamed or blanched)
  • 3 cups cooked pasta (penne, rotini, or spaghetti work well)
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • Salt and pepper, to taste
  • ¼ teaspoon red pepper flakes (optional for heat)

  • Fresh parsley (optional, for garnish)

Instructions

  • Heat olive oil in a large skillet over medium heat. Add the diced chicken and cook until browned and cooked through (about 6-8 minutes). Season with salt and pepper.
  • Add the minced garlic to the skillet with the chicken and cook for another 1-2 minutes until fragrant.
  • Stir in the cooked pasta and broccoli florets. Toss everything together to combine.
  • Pour in the heavy cream (or half-and-half) and grated Parmesan cheese. Stir until the sauce thickens and everything is well-coated.
  • Season with salt, pepper, and red pepper flakes (if using). Adjust to taste.

  • Garnish with fresh parsley, if desired, and serve immediately.

Notes

  • You can use any type of pasta you prefer, but penne or rotini work especially well for this dish.
  • For a lighter version, you can substitute half-and-half for the heavy cream.

  • Feel free to add extra veggies like peas or spinach for more flavor and nutrition.
