Ingredients
Scale
- 2 boneless, skinless chicken breasts, diced
- 2 cups broccoli florets (steamed or blanched)
- 3 cups cooked pasta (penne, rotini, or spaghetti work well)
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- ½ cup grated Parmesan cheese
- 1 cup heavy cream (or half-and-half for a lighter version)
- Salt and pepper, to taste
- ¼ teaspoon red pepper flakes (optional for heat)
- Fresh parsley (optional, for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat. Add the diced chicken and cook until browned and cooked through (about 6-8 minutes). Season with salt and pepper.
- Add the minced garlic to the skillet with the chicken and cook for another 1-2 minutes until fragrant.
- Stir in the cooked pasta and broccoli florets. Toss everything together to combine.
- Pour in the heavy cream (or half-and-half) and grated Parmesan cheese. Stir until the sauce thickens and everything is well-coated.
- Season with salt, pepper, and red pepper flakes (if using). Adjust to taste.
- Garnish with fresh parsley, if desired, and serve immediately.
Notes
- You can use any type of pasta you prefer, but penne or rotini work especially well for this dish.
- For a lighter version, you can substitute half-and-half for the heavy cream.
- Feel free to add extra veggies like peas or spinach for more flavor and nutrition.
