- 1 lb (450g) Italian sausage meat (mild or spicy)
- 4 servings of pasta (farfalle pasta used in this recipe)
- 2 garlic cloves, peeled and roughly chopped
- 7 oz (200g) cherry tomatoes, roughly chopped
- 1 handful of fresh spinach
- 2 tablespoons tomato puree
- 1 teaspoon paprika
- ½ teaspoon cayenne pepper
- 1 tablespoon olive oil
- ½ teaspoon chili flakes
- ½ teaspoon pepper
Instructions
- Cook the Pasta: Start by cooking the pasta according to the package instructions. Once done, drain and set aside.
- Cook the Sausage: Heat olive oil in a pan over medium heat. Add the Italian sausage meat and cook, breaking it up as it browns, until fully cooked.
- Prepare the Veggies: Add the chopped garlic and cherry tomatoes to the pan, and sauté until the tomatoes soften.
- Add the Spices: Stir in paprika, cayenne pepper, chili flakes, and pepper. Let the spices cook for a minute to release their flavor.
- Add Tomato Puree: Mix in the tomato puree and let it simmer for a few minutes until the sauce thickens slightly.
- Add Spinach: Stir in the fresh spinach and cook until it wilts.
- Combine with Pasta: Add the cooked pasta to the pan and toss everything together, ensuring the pasta is well coated in the sauce.
- Assemble the Wraps: Spoon the cheesy sausage pasta mixture onto tortillas and wrap them tightly.
