Description

These soft and chewy carrot cake cookies bring all the flavors of a classic carrot cake in the form of a convenient, handheld treat! Packed with carrots, warm spices, and a touch of sweetness, these cookies are perfect for dessert, snacks, or even as an Easter treat.

  • 1/2 teaspoon baking soda

  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup finely grated carrots
  • 1/2 cup rolled oats
  • 1/2 cup chopped walnuts (optional)
  • 1/4 cup shredded coconut (optional)
  • 1/2 cup raisins (optional)

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  • In a large bowl, beat the butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Stir in the grated carrots, oats, walnuts, shredded coconut, and raisins (if using).
  • Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are golden and the centers are set.
  • Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  • Optionally, drizzle with cream cheese frosting for an extra indulgent treat!

Notes

  • For extra flavor, you can add a teaspoon of vanilla extract or a pinch of ginger.
  • You can replace the walnuts with pecans or skip them entirely if you prefer.
  • If you don’t like raisins, feel free to omit them or replace them with chopped dried apricots.
