These Cajun Stuffed Chicken Breasts are bursting with flavor! Stuffed with a delicious mixture of sautéed mushrooms, bell peppers, onions, and melted pepper jack cheese, then seasoned with zesty Cajun spices and cooked to perfection, this dish is sure to become a family favorite.

  • 4 boneless, skinless chicken breasts

  • 1 tablespoon olive oil

  • 4 medium white or cremini mushrooms, sliced

  • ½ medium red bell pepper, diced

  • ½ medium green bell pepper, diced

  • ¼ medium white onion, diced

  • ½ cup shredded pepper jack cheese

  • 4 teaspoons Cajun seasoning

  • 4 tablespoons salted butter


Instructions

  • Preheat the oven: Preheat your oven to 375°F (190°C).

  • Prepare the chicken breasts: Using a sharp knife, cut a pocket into each chicken breast by slicing horizontally, being careful not to cut all the way through. Set the chicken aside.

  • Make the filling: Heat the olive oil in a skillet over medium heat. Add the sliced mushrooms, diced bell peppers, and onions. Sauté for 5-7 minutes, until softened and the mushrooms release their moisture. Remove from heat and stir in the shredded pepper jack cheese until melted and combined.

  • Stuff the chicken: Season each chicken breast with Cajun seasoning on both sides. Stuff the chicken breasts with the mushroom and cheese mixture, then secure the openings with toothpicks or kitchen twine to hold the filling inside.

  • Cook the chicken: In the same skillet, melt the butter over medium-high heat. Once hot, add the stuffed chicken breasts and sear each side for about 3-4 minutes until golden brown.

  • Bake the chicken: Transfer the skillet with the chicken to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the filling is hot and bubbly.

 

  • Serve: Remove the toothpicks or twine, slice the chicken, and serve hot.

Notes

  • If you want a spicier kick, you can add some hot sauce or more Cajun seasoning to the filling.

  • You can also substitute the pepper jack cheese with cheddar or mozzarella if preferred.
