- ½ cup Granulated sugar
- 1 cup Brown sugar
- 2 Large Eggs
- 1.5 teaspoons Vanilla extract
- 2.5 cups All-purpose flour
- 1 teaspoon Cinnamon powder
- 1 teaspoon Cornstarch
- 1 teaspoon Baking soda
- ½ teaspoon Baking powder
- 1.5 cups Unsalted Pecans, roughly chopped (preferably toasted)
- ½ cup Toffee bits (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
- In a large mixing bowl, cream together the melted butter and both sugars until light and fluffy.
- Beat in the eggs, one at a time, and then add the vanilla extract.
- In a separate bowl, whisk together the flour, cinnamon, cornstarch, baking soda, and baking powder.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the toasted pecans and optional toffee bits.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges of the cookies are golden brown.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
