  • 1 ½ cups cottage cheese
  • 3 large eggs
  • ½ cup milk (can be dairy or non-dairy)
  • ¼ cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • 1 ½ cups rolled oats
  • 1 ½ tsp baking powder
  • 1 ½ cups fresh or frozen blueberries (reserve some for topping)

Instructions

  • Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking dish.
  • In a large bowl, whisk together cottage cheese, eggs, milk, maple syrup or honey, vanilla extract, cinnamon, and salt.
  • Stir in the rolled oats and baking powder.
  • Gently fold in the blueberries, reserving some for the topping.
  • Pour the mixture into the prepared dish and spread evenly. Top with the reserved blueberries.
  • Bake for 30-35 minutes or until set and lightly golden.
  • Cool for 5-10 minutes before slicing. Serve warm.

Notes

  • You can substitute raspberries or chopped strawberries for blueberries.
