Ingredients
For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the Cheesecake Filling:
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 2 tbsp all-purpose flour
For the Topping (optional):
- Fresh berries (strawberries, raspberries, blueberries)
- Whipped cream
Instructions
- Preheat the Oven: Preheat your oven to 325°F (160°C). Line a muffin tin with paper liners.
- Prepare the Crust: In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter. Spoon a tablespoon of the mixture into each muffin cup and press it down firmly with the back of a spoon. Bake for 5-7 minutes, then set aside to cool.
- Prepare the Cheesecake Filling: In a large bowl, beat the softened cream cheese with sugar until smooth and creamy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, sour cream, and flour until smooth.
- Fill the Cups: Spoon the cheesecake filling over the prepared crusts in the muffin tin, filling each cup nearly to the top.
- Bake: Bake for 15-20 minutes, or until the center is set and the edges are slightly golden. Allow the mini cheesecakes to cool to room temperature, then refrigerate for at least 2 hours or until fully chilled.
- Top and Serve: Once chilled, top each mini cheesecake with fresh berries and whipped cream if desired. Serve and enjoy!

- Topping Variations: Feel free to add fruit preserves, caramel sauce, or a drizzle of chocolate syrup for extra flavor.
