Description

This flavorful Smothered Chicken and Rice dish combines juicy chicken with a rich, creamy gravy served over tender rice. It’s comfort food at its best, perfect for family dinners and special occasions!


Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 tbsp olive oil

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 1 cup long-grain white rice

  • 2 cups chicken broth

  • 1 cup heavy cream

  • 2 tbsp all-purpose flour

  • 1 tsp paprika

  • 1 tsp thyme

  • Salt and pepper, to taste

  • Fresh parsley for garnish (optional)


Instructions

  • Heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt, pepper, and paprika, then sear them for 4-5 minutes on each side until golden brown. Remove and set aside.

  • In the same skillet, add diced onion and garlic, cooking until softened, about 2-3 minutes.

  • Stir in flour and cook for 1 minute to create a roux. Gradually add chicken broth, stirring constantly until the sauce thickens.

  • Add the heavy cream, thyme, and adjust seasoning with salt and pepper. Stir to combine.

  • Return the chicken breasts to the skillet and pour the sauce over them. Cover and simmer for 25-30 minutes, until the chicken is fully cooked through.

  • While the chicken simmers, prepare the rice according to package directions.

 

  • Serve the smothered chicken on top of rice, garnished with parsley.

Notes

  • For extra flavor, you can add mushrooms to the gravy or a splash of white wine to the sauce.

 

  • If you prefer a spicier dish, add a pinch of cayenne pepper or some hot sauce to the gravy.
