Ingredients

4 boneless, skinless chicken breasts

1 tbsp olive oil

1 medium onion, diced

2 cloves garlic, minced

1 cup long-grain white rice

2 cups chicken broth

1 cup heavy cream

2 tbsp all-purpose flour

1 tsp paprika

1 tsp thyme

Salt and pepper, to taste

Fresh parsley for garnish (optional)
Instructions

Heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt, pepper, and paprika, then sear them for 4-5 minutes on each side until golden brown. Remove and set aside.

In the same skillet, add diced onion and garlic, cooking until softened, about 2-3 minutes.

Stir in flour and cook for 1 minute to create a roux. Gradually add chicken broth, stirring constantly until the sauce thickens.

Add the heavy cream, thyme, and adjust seasoning with salt and pepper. Stir to combine.

Return the chicken breasts to the skillet and pour the sauce over them. Cover and simmer for 25-30 minutes, until the chicken is fully cooked through.

While the chicken simmers, prepare the rice according to package directions.

Serve the smothered chicken on top of rice, garnished with parsley.
