- 4 rib-eye or filet mignon steaks (about 6 oz each)
- 8 strips of thick-cut bacon
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tbsp fresh rosemary, chopped (or 1 tsp dried rosemary)
- Salt and freshly ground black pepper, to taste
- 1 tbsp butter (optional for finishing)
Instructions
- Preheat your oven to 400°F (200°C).
- Season the steaks with salt, pepper, minced garlic, and rosemary on both sides.
- Wrap each steak with two strips of bacon, securing the bacon with toothpicks if necessary.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Once the pan is hot, sear the steaks for 2-3 minutes per side until the bacon is crisp and the steak has a nice brown crust.
- Transfer the skillet to the preheated oven and bake the steaks for 6-8 minutes (for medium-rare) or longer, depending on your desired doneness.
- Remove the steaks from the skillet and let them rest for 5 minutes before serving. Optionally, add a small pat of butter on top to melt over the steak for extra richness.
Notes
- You can use other cuts of steak like sirloin or T-bone, but rib-eye or filet mignon are ideal for this recipe.
- For extra flavor, try marinating the steaks before cooking.
