Description

This creamy and comforting dish combines tender chicken, fluffy rice, and a savory blend of butter, cream cheese, and chicken stock, all topped off with melted Colby Jack cheese. It’s the perfect cozy meal for family dinners or weeknight meals!


Ingredients

  • 3 cups cooked chicken, diced or shredded

  • 3 cups cooked rice

  • ½ cup butter, room temperature and cubed

  • 8 ounces cream cheese, room temperature and cubed

  • 10.5 ounces cream of chicken soup

  • 3 cloves garlic, minced

  • 0.7 ounce Italian dressing mix (I used Good Seasons)

  • 1 cup chicken stock

  • 2 cups shredded Colby Jack cheese, divided use

  • Salt and pepper to taste

  • Fresh parsley for garnish


Instructions

  • Preheat your oven to 350°F (175°C).

  • In a large mixing bowl, combine the cooked chicken, cooked rice, butter, cream cheese, cream of chicken soup, garlic, Italian dressing mix, and chicken stock. Stir everything together until the butter and cream cheese are melted and the ingredients are well combined.

  • Season with salt and pepper to taste.

  • Transfer the mixture to a greased 9×13 baking dish. Sprinkle 1 cup of the shredded Colby Jack cheese evenly over the top.

  • Cover with foil and bake for 25 minutes.

  • After 25 minutes, remove the foil and bake for another 5-10 minutes, until the cheese is melted and bubbly.

  • Remove from the oven and let it cool for a few minutes before serving.

 

  • Garnish with fresh parsley before serving.

Notes

  • This dish is great for meal prep and can be stored in the refrigerator for a few days.

 

  • You can substitute the Colby Jack cheese with other types of cheese if preferred, like cheddar or mozzarella.
