- 2 cups mashed potatoes (chilled and firm)
- 1 cup shredded mozzarella or cheddar cheese
- ½ cup grated Parmesan cheese
- 1 egg, beaten
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and pepper, to taste
- 1 cup breadcrumbs (panko or regular)
- Cooking spray or a little olive oil
Instructions
- Prepare the Mashed Potatoes: Make sure the mashed potatoes are chilled and firm (use leftovers if possible). If freshly made, allow the mashed potatoes to cool completely before using.
- Mix the Ingredients: In a large bowl, combine the mashed potatoes, mozzarella (or cheddar) cheese, Parmesan cheese, beaten egg, garlic powder, onion powder, salt, and pepper. Stir until well combined.
- Shape the Balls: Take small portions of the mashed potato mixture and roll them into 1 to 1.5-inch balls. If the mixture is too sticky, dampen your hands with a little water.
- Coat the Balls: Roll each ball in the breadcrumbs, making sure they’re fully coated. You can use panko breadcrumbs for extra crunch, but regular breadcrumbs will work fine as well.
- Air Fry the Balls: Preheat the air fryer to 375°F (190°C). Lightly spray the basket with cooking spray or brush it with olive oil. Place the potato balls in the air fryer basket, making sure they’re not overcrowded.
- Cook: Air fry for 10-12 minutes, flipping halfway through, until the potato balls are golden and crispy on the outside.
- Serve and Enjoy: Serve hot as a side dish or snack, and enjoy with your favorite dipping sauce!
