  • 2 cups mashed potatoes (chilled and firm)
  • 1 cup shredded mozzarella or cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 egg, beaten
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper, to taste
  • 1 cup breadcrumbs (panko or regular)
  • Cooking spray or a little olive oil

Instructions

  • Prepare the Mashed Potatoes: Make sure the mashed potatoes are chilled and firm (use leftovers if possible). If freshly made, allow the mashed potatoes to cool completely before using.
  • Mix the Ingredients: In a large bowl, combine the mashed potatoes, mozzarella (or cheddar) cheese, Parmesan cheese, beaten egg, garlic powder, onion powder, salt, and pepper. Stir until well combined.
  • Shape the Balls: Take small portions of the mashed potato mixture and roll them into 1 to 1.5-inch balls. If the mixture is too sticky, dampen your hands with a little water.
  • Coat the Balls: Roll each ball in the breadcrumbs, making sure they’re fully coated. You can use panko breadcrumbs for extra crunch, but regular breadcrumbs will work fine as well.
  • Air Fry the Balls: Preheat the air fryer to 375°F (190°C). Lightly spray the basket with cooking spray or brush it with olive oil. Place the potato balls in the air fryer basket, making sure they’re not overcrowded.
  • Cook: Air fry for 10-12 minutes, flipping halfway through, until the potato balls are golden and crispy on the outside.
  • Serve and Enjoy: Serve hot as a side dish or snack, and enjoy with your favorite dipping sauce!
